Roasted Carrots with Rosemary & Honey

Serving a healthy dinner doesn’t have to be complicated.  Sometimes I think we overthink it.

  • How does something that takes less than 5 minutes to throw in the oven sound? check.
  • And what if it was really healthy to boot? check.
  • 6 ingredients you likely have on hand? check.
  • Something that compliments just about any main dish?  check.

Roasted Carrots with Rosemary & Honey
Simple. Fresh. Delicious. Fast. Roasted carrots with rosemary & honey. In the oven within 5 minutes.
Course Dinner, Lunch or Snack, Main Dish
Prep Time 5 minutes
Cook Time 40 minutes

Ingredients
  • 1 pound organic baby carrots
  • 2 tsp raw organic honey
  • 2 tsp chopped fresh rosemary *use 1 tsp dried if you don't have fresh or use another fresh herb you have on hand such as thyme, sage or tarragon
  • 1 tsp fine sea salt
  • 1/2 tsp cracked black pepper
  • 1.5 Tbsp ghee *or organic grass fed butter
Course Dinner, Lunch or Snack, Main Dish
Prep Time 5 minutes
Cook Time 40 minutes

Instructions
  1. Preheat oven to 350 degrees
  2. Chop fresh rosemary {or fresh herb of choice}
  3. Melt ghee {or butter}
  4. Toss all ingredients in a bowl
  5. Line a small baking sheet with parchment paper and arrange carrots in a single layer
  6. Bake for 30-40 minutes or until tender when pierced with a fork
Share this Recipe

Stuck on a quick main dish? Melt 1 Tbsp ghee in a cast iron skillet then arrange 4 whole chicken legs in it, sprinkle with salt, pepper, paprika and fresh rosemary. Place in the oven with the carrots.  They’ll be done at the same time! {of course always check your meat’s temperature to be sure it’s cooked through}
