Cajun {Pork} Butt Rub

Ya’ll … this recipe is so crazy simple and the end results are unreal!  If you want something you can have in the crock pot within 10 minutes…press the start button and walk away for the day… and experience happy tummies around the dinner table that night, then you just hit the jack pot!

I’d been making the same ol’ beef pot roast recipe for YEARS.  It was a tried and true, tender and juicy, family favorite…why blaze a new trail?  Why?  Cause’ I got bored with it and because I’ve seriously cut down on grains and dairy so I didn’t want to tempt myself with decadent cheesy risotto as the bed for this slab of meat.

I started to experiment with dry rubs, played around with bits and pieces of some basic recipes I found online and adapted them until I hit the nail on the head with this baby!  Now, if you don’t like spicy, you can easily turn down the heat by omitting the red pepper flakes and cutting down on the cayenne pepper… easy peasy. If you don’t do any type of sweetener, then leave the coconut sugar out.

To make a complete meal try out my simple roasted carrots with rosemary and honey or my rosemary potato recipe, or just add some baby carrots to the crock pot 90 minutes before dinner time!  Use whatever stock you have on hand for this recipe but if it’s already salted or reduced sodium, decrease or omit the salt from the rub. Consider making my lamb or beef stock to have on hand in the freezer for recipes such as this!

Ingredients
  • 4 Pound Boneless Pork Butt
  • 1 tsp Coarse black pepper
  • 1 tsp Onion powder
  • 1.5 tsp Cayenne pepper
  • 1 tsp Oregano
  • 1 tsp Thyme
  • 2 tsp Garlic powder
  • 2 tsp fine sea salt
  • 2.5 tsp Paprika
  • 1/2 tsp Red pepper flakes
  • 1 Tbsp Coconut sugar omit for sugar free recipe
  • 2 Cups Stock Salt free: beef, lamb or chicken

  • 4 Pound Boneless Pork Butt

  • 2 Cups Stock Salt free: beef, lamb or chicken
Instructions
  1. If the pork butt is tied with string, remove it {you want to get the rub in all the cracks of the butt}
  2. Combine rub ingredients in small bowl
  3. Massage the rub all over & inside the butt for a few minutes to make sure it's thoroughly loved
  4. Place rubbed butt in the crock pot, fat side up
  5. Pour 2 cups of stock gently over the butt
  6. Put lid on and set crock pot on low for 8-10 hours and walk away!
  7. When it's dinner time, simply shred the meat while it's in the crock pot and serve
Recipe Notes

For an even bigger flavor explosion, go ahead and rub the butt the night before you put it in the crock pot!  

Add in’s/Options:

  • 2 cloves {2 tsp} minced garlic  {*add to rub mixture to create more of a paste and omit the garlic powder from recipe}
  • 1 medium onion chopped {*add to crock pot on top after adding the liquid}
  • Baby carrots {*Add some baby carrots about 90 minutes before you plan to eat or try my roasted carrot recipe}
  • Rice or Cauliflower "rice" make a great bed to soak up the juices

Because I KNOW you are going to love this…go ahead and triple the ingredients and then use 1/4 c each time you make this recipe!

The reason I say this 4 pound hunk of meat only serves 8 is because there is a bunch of fat that typically gets discarded after cooking (we eat a good bit of it). I can also PROMISE you that YOU.WILL.WANT.LEFTOVERS so go BIG on the meat… it will not go to waste!

I really prefer Frontier Organic spices. They are AMAZING… fresh and the bulk prices are incredibly low compared to those 1-3oz containers you buy of any spice at the store.  Garlic  Onion  Cayenne  Oregano   Thyme  Paprika  And I love the Real Salt brand of sea salt!
