The burgers are so juicy & tender with a hint of “heat” and the waffles have that perfect combination of soft and crunch. Folks, the topping possibilities are endless too! Dig in!
I originally tried a similar recipe from The Grain Brain Cookbook by Dr. David Perlmutter, MD. It’s a fantastic book! I gave the recipe some tweaks and have gone crazy with toppings on these bad boys! Since our family is gluten free but not all of us are grain free all the time, I decided to come up with something kind of fun instead of just gluten free bread. I love to grind fresh corn flour and this was the perfect recipe to get creative with it by making cornbread waffles {I also had a 40# bucket of corn in the basement!}. The flavor of the two combined is fabulous! You can of course leave the “spicy” part out or if you want to turn up the heat a bit more you can sprinkle some finely diced jalapeno in the waffle batter!

- 1 pound Ground chicken -You can also do 1/2 chicken & 1/2 turkey
- 2 tsp Finely minced jalapeno -Get those seeds out!
- 2 tbsp Finely diced bell peppers -The red ones give the burgers a pretty "pop" of color
- 2 tbsp Finely diced scallions -If you don't like 'em, don't add 'em
- 1 Egg-slightly whisked -If you don't eat eggs, leave it out
- 1/2 tsp Ground cumin -Decrease to cut "heat"
- 1/4 tsp Sea salt-fine
- 1/8 tsp Ground black pepper
- 2/3 cup Gluten Free baking mix -Use your favorite or GF Bisquick works great in a pinch
- 2/3 cup Cornmeal -Go with organic, non-GMO if you can
- 1/4 tsp Ground cumin
- 2 Eggs -If you don't do eggs, replace with 2tbsp ground flax mixed with 6tbsp water...let sit for 5 minutes, stirring occassionally
- 3 tbsp Vegetable oil of choice -non-GMO
- 1/2 cup Sourcream If you don't do dairy, replace with a plain milk alternative yogurt such as almond or coconut
- 1/2 cup water
- 2 tsp Finely minced jalapeno -Get those seeds out or leave out if you want to cut the heat on this recipe
- 1/2 cup Shredded cheese of choice -Optional, but consider raw cheese if you indulge

- Give the egg a little whip.
- Mix all the other ingredients in
- Form in to 4 patties
- Preheat a cast iron skillet to medium heat and add a drizzle of coconut oil
- Fry up that burger
- While the cast iron skillet is heating up, go ahead and pre-heat your waffle iron
- Mix the dry ingredients in a medium bowl
- Add the wet ingredients and stir until well combined
- Cook up your waffles in your waffle iron. {Mine requires a bit of oil to keep things from sticking}
Lay on the toppings, girlfriend...sliced avocado, sprouts, raw cheese, homemade mayo, thinly sliced red onion, or whip up some guacamole...
How about some bacon?
If you don't "do" grains, use a lettuce leaf to create your "sandwich"
These make great "sliders" if you have a mini waffle maker, just form 8 smaller burger patties
