12ozChicken-OK…that’s a broad term…. You “could” cook it from scratch and cut it up. You “could” cheat like I do and buy the shredded rotisserie chicken by the pound on the Whole Foods Salad bar. You “could” save up leftover cooked chicken- just throw it in a freezer bag until you have enough to make a batch. You “could” go buy a rotisserie chicken and pull all the meat off then take the rest of that bird and save it for bone broth. So… bottom line… get yer chicken from whatever method you prefer. Chop it, cube it, dice it, shred it… whatever “shape” you prefer.
1tbspMinced fresh herbs-Thyme, Tarragon or Rosemary… Do all the same or combine
1/3cupDiced apples
1/3cupDiced red grapes
1/4cupDiced red onions-Or green onions
1/3cupDiced celery
1/3cupChopped nuts-Pecans, walnuts or almonds are all a great choice
1cupMayo-Make your own or buy whatever type suits your preferences. I happen to love the brand “Just Mayo” which is egg, dairy, soy & gluten free. It is creamy…dreamy…goodness.
1pinchSalt & pepper-To taste

Mix all the ingredients up in a bowl, get to desired creaminess by adding more mayo until you get it just right

Do whatever you want with it:
spread on crackers. I happen to be slightly addicted to the “Mary’s Gone Crackers” brand when I am indulging in a few grains
make a sandwich with whatever bread suits your diet
wrap in a piece of lettuce leaf
remove avocado from ½ of skin-chop it-mix it in with ½ cup of your prepared chicken salad and return it all to the empty ½ of the avocado skin. It sure looks pretty like that for a shindig!
top it with cucumber, sprouts, tomato or avocado slices
or just dig in with a fork right out of the mixing bowl!
