Ok, folks… If you like recipes that tell you the exact amount to add of an exact list of ingredients, then this may not be the recipe for you! I’ll do my best, but this recipe has a lot of wiggle room based on personal preference, food allergies, etc. Add what you want…remove what you want. The sky is the limit with these tasty bites!

Energy Bites
|
- 2 cups Gluten free rolled oats
- 2 cups Shredded coconut -Unsweetened
- 1 cup Nut butter -Peanut, Cashew, Almond, Sunflower, etc
- 1 cup Ground flax seed
- 1/2 cup Slivered almonds
- 1/4 cup Sprouted pumpkin seeds -Chop 'em up a bit
- 1/4 cup Sprouted sunflower seeds -Chop 'em up a bit
- 1/4 cup Chia seeds
- 1/2 cup Mini chocolate chips -I love the "Enjoy Life" brand {or try dried fruit such as cranberries, raisins or dates}
- 2/3 cup Honey -Local or raw
- 2 tsp Vanilla
- 1 tsp Cinnamon
Ingredients

- Pulverize 1 cup of the oats and place in a large bowl
- Add all remaining ingredients
- Mush it all up thoroughly as if you are making meatballs
- Line a baking sheet with waxed paper
- Take about 1.5T and roll in to a tight ball and place on the baking sheet {or make them whatever size you want}
- If they are too crumbly add a bit more honey or nut butter. If they are too mushy you can add some more oats.
- When you have the right consistency, keep going until the mixture is gone
- Place the cookie sheet in the freezer for about an hour {of course you can go ahead and keep a few out to eat or store in the fridge}
- Store frozen Energy Bites in a freezer bag or storage container and store in the freezer for up to 3 month
- Keep a few thawed out in the fridge for a quick snack anytime.
- For lunches, simply place 2-3 frozen energy bites in to a container in your child’s lunchbox in the morning. They are thawed and ready to eat by lunch time! Perfect for sports practice, after school snacks, road trips, etc.
- I usually double this recipe. Heck... while you have the ingredients out, why not? They won't go to waste... I promise!
