Spicy Chicken Burgers with Cornbread Waffles

Ingredients
Burgers
  • 1pound Ground chicken-You can also do 1/2 chicken & 1/2 turkey
  • 2tsp Finely minced jalapeno-Get those seeds out!
  • 2tbsp Finely diced bell peppers-The red ones give the burgers a pretty “pop” of color
  • 2tbsp Finely diced scallions-If you don’t like ’em, don’t add ’em
  • 1 Egg-slightly whisked-If you don’t eat eggs, leave it out
  • 1/2tsp Ground cumin-Decrease to cut “heat”
  • 1/4tsp Sea salt-fine
  • 1/8tsp Ground black pepper
Waffles
  • 2/3cup Gluten Free baking mix-Use your favorite or GF Bisquick works great in a pinch
  • 2/3cup Cornmeal-Go with organic, non-GMO if you can
  • 1/4tsp Ground cumin
  • 2 Eggs-If you don’t do eggs, replace with 2tbsp ground flax mixed with 6tbsp water…let sit for 5 minutes, stirring occassionally
  • 3tbsp Vegetable oil of choice-non-GMO
  • 1/2cup SourcreamIf you don’t do dairy, replace with a plain milk alternative yogurt such as almond or coconut
  • 1/2cup water
  • 2tsp Finely minced jalapeno-Get those seeds out or leave out if you want to cut the heat on this recipe
  • 1/2cup Shredded cheese of choice-Optional, but consider raw cheese if you indulge
Instructions
Burgers
  1. Give the egg a little whip.
  2. Mix all the other ingredients in
  3. Form in to 4 patties
  4. Preheat a cast iron skillet to medium heat and add a drizzle of coconut oil
  5. Fry up that burger
Waffles
  1. While the cast iron skillet is heating up, go ahead and pre-heat your waffle iron
  2. Mix the dry ingredients in a medium bowl
  3. Add the wet ingredients and stir until well combined
  4. Cook up your waffles in your waffle iron. {Mine requires a bit of oil to keep things from sticking}
Recipe Notes

Lay on the toppings, girlfriend…sliced avocado, sprouts, raw cheese, homemade mayo, thinly sliced red onion, or whip up some guacamole…

How about some bacon?

If you don’t “do” grains, useĀ a lettuce leaf to create your “sandwich”

These make great “sliders” if you have a mini waffle maker, just form 8 smaller burger patties
